Citron Meringuee Deconstructed

Don't think for one second since I'm showing you a list of ingredients I'm about to start baking citron tartes meringuees EVER.

Beaten eggwhites/meringue and I have parted company permanently...

Even so I tried to taste, shoot or eat a citron tarte meringuee almost daily last trip in Paris.

My expertise has risen quite a few notches. This version from Monop is one you can pass up without remorse. Lackluster and not lemony enough. Plus the meringue lacked structure (it was mushy) and panache (whatever that is..). Still the high crust is an interesting innovation and merits 1*.

Tres chic MIYOU's version at La Bon Marche was much more lemony but the meringue again was too mushy.

In the end, after two weeks of intensive research, I must sadly conclude that we're dealing with a tarte au citron i.e. a lemon curd pie plus a dollop of meringue of varying sizes. In some cases this is can be a mere smidge of meringue.

No doubt the citron meringuee is 'in' right now in Paris. I saw it everywhere.

But how different is this from ordering a plain bagel?


Or a bagel with a 'schmear'?

Sorry that's how I see it PBers.

I suggest you pick up this tarte-shaped cookbook at BHV(9.90 euros) and get cracking on the lemon tarte and call it a day. Making a good meringue can be hellish.

Now this tarte can be called meringuee in my opinion.

Quelle surprise! You are a little bit like a trifle. Your creme citron dedans is surrounded by a thin layer of sponge. And on top a decorative meringue, a little toasted, pleasently gooey like a baked Alaska. Who knew?
You are worth the dreams but I must leave room pour les autres tartes.

Brasserie Tarte au Citron.
The proud owner doesn't mind a bit as he drinks his tarte au citron biere.
Even Parisien workers are decked out in tarte au citron!
The shop vitrines may be full of color including tarte citron.
Mais les Parisiens, comme habitude, are decked out in noir, gris, beige comme toujours.
I make it over to Gerard Mulot in the 6th. Raids-Patisserie says he has the best citron tarte au meringuee.
Le Figaro says Mulot has the best tarte fraise. I buy both and French Girl and I gobble them down almost forgeting to take a picture. Were they wonderful? BIEN SUR!
Bear and I are very happy to be in Paris.

Cupcakes Berko

Cheescake and cupcakes... What's not to love? BUT is this why you come to Paris? OUI! If it's BERKO in the Marais at 23 rue Rambuteau 75004
I'm not even a cupcake person but...
These little minis are soooo enticing.
Now Berko has long rectangular tartes in citron meringue too...
What to get? The citron meringue mini cuppie? Which one would you fall for?
OR the long tarte thing? The tarte thing won out bien sur - more lemon meringue to love. It was just as good as it looks, maybe even better. Note the pecan tartes behind and it ain't even Thanksgiving!?
Berko has new little mini round tartes too...
I thoughtfully waited until after lunch before showing you these...

Sue's daffodils inspired me to run out and buy some to paint...

Cris in Oregon has daffodils growing in her own garden, even if they are facing away from her window - naughty daffs. If I was in Paris now I'd be wearing this jonquil jaune/yellow cardigan I would... David Lebovitz is smitten with jonquil yellow bergamots.
I've never had one, have you? All Paris adores yellow disks, especially their famous tarte au citron... More yellow disks, this time at L'Epicerie...
Here's a yellow-obsessed French woman about to fall into a case of tarte au citrons at patisserie Gerard Mulot. Oh to be in her shoes...
In Paris it's nothing to cook your dinner in a miniature jonquil yellow cocotte. If you can't make your own do stop in at Les Cocottes, 135, rue St.Dominique 75007
Or eat under a yellow awning at 17 Avenue de la Motte Picquet.
Petit Bateau's vitrine are full of yellow right now if you hurry...
Just some yellow walls I captured on the run in Paris...
In a weeks time I'll be boarding AirFrance for Paris. Miam-miam
